Al Dente
Italian for 'to the tooth'. It refers to the firm but trender consistency a perfectly (in some opinions) cooked piece of pasta will have.
An Italian expression indicating the correct degree of cooking for pasta, which must be removed from the heat and drained while it is still firm enough to bite into. The term can also be used to describe the degree of doneness for certain vegetables, like green beans, which are best served while still crunchy.
