MILK--PASTEURIZING
Milk must be heated with agitation in such a way that every particle of the milk, including the foam, reaches a temperature of 145 degrees F sustained for 30 minutes, or 161 degrees F, sustained for 30 seconds.
The sale of unpasteurized milk products is illegal in Illinois.
