SODIUM BISULFITE

Sodium bisulfite is used as an anti-darkening agent when drying fruit. You may substitute sodium sulfite, or sodium or potassium metabisulfite. These ingredients may be obtained from your local pharmacy. To pre-treat fruits,prepare a solution of one tablespoon of sodium bisulfite, or two tablespoons of sodium sulfite, or four tablespoons of sodium metabisulfite in one gallon of water. Place sliced fruit into the solution as soon as it is sliced. Soak slices for at least 5 minutes and halves for at least 12 minutes. After soaking is complete, drain the fruit and rinse with cold water. The fruit is now ready for drying.
CAUTION: Persons allergic to sulphur should not use products treated with these products.
