WATER BATH
Bain marie in French. A method of gently cooking delicate foods such as custards, on the stove or in the oven in a pan partially fillled with water.
Boiling water bath method of food preservation requires 1 inch of water over the top of the jars. Water should be maintained at a rolling boil. Process food for the required amount of time recommended by the University of Illinois and USDA. See University of Illinois canning card "Recommended Processing Times" - EHE 660.
